Hello! This week has turned out to be a whirlwind because I decided that I am going to FNCE for a few days. FNCE is our annual nutrition conference. Here’s my recap from when I went in Boston a few years ago. Basically, it’s very overwhelming but it’s chockfull of new nutrition research, networking, food trends and brands. It also provides continuing education for dietitians.
There are sooo many people that go, and I’m already slightly overwhelmed preparing. Yet, I know it will be good to get back in some “career” stuff. I’m really excited because there is going to be a debate about Health at Every Size Versus the Weight Management approach in nutrition. So, hopefully I’ll come back armed with more research I can use to help decrease any weight stigma.
Last weekend, my family was in town. We spent the day in Winston Salem where my dad was honored at his alma mater, Wake Forest. It was so fun hosting everyone and made me feel all cozy having all the family (minus my sister in Australia) staying with us. My parents hadn’t seen Camryn since late July, so she has obviously changed so much since then! Winston Salem is only an hour away from Charlotte so it was an easy day trip. We stopped for BBQ on the way up too.

We had donuts one morning, and cooked in two of the three nights.
One night was three different frozen pizzas because it was EASY and took no thought. And then one night my mom made lasagna, garlic bread, a huge salad, and bought ice cream cake. Ice cream cake is one of my favorite foods – I used to eat a piece after school every day growing up. So, my mom knows how much I love it and always picks one up when I’m home or she’s visiting. No special occasion needed. I’m so grateful to be able to enjoy the food and memories.
Speaking of food, we did some more baby led weaning this week with Camryn. We added in full fat yogurt, strawberries, peppers, beans, pears, cucumbers and turkey. Cam seems to be getting the hang of feeding herself and enjoying it so far. I still have some questions for my pediatrician but we’re making progress. Anyone know when babies can start having water?
I also found out about baby consignment stores this week and don’t think I’ll be buying anything new anytime soon. Best thing ever – bought this outfit for Cam’s 6 month photo.
Some of my favorite meals this week have been this almond butter tofu stir fry and this banana bread (I also added blueberries) slathered with peanut butter (reminded me of my sweet potato bread). I also made a super yummy stuffed sweet potato, stuffed with beans, cheese, crockpot chicken (cooked with a can of salsa on low for 8 hours) and avocado. And banana bread + ice cream is a great bedtime snack.
Tomorrow I am in a wedding and then I’ll head to FNCE. I have a fun post coming for you on Monday!
What’s your favorite bedtime snack?
Any tips for being efficient and saving room when packing? I read somewhere to roll up socks and put them in your packed shoes. I’ve never done that before but I thought it was a great tip!
