I haven’t done a food dump post in a while so I figured it was time. I have been taking pictures of my food but not sharing them on here. I hope these will inspire you for some easy meal ideas.
What’s working for me now is planning easy meals based on ingredients I have on hand. Components that include a carb, protein and some veggies, and that is applicable to serve to Camryn. Sometimes that includes pre-made and processed store options. Other times I can put things together based on what I have. Success in the kitchen right now is not stressing about meals and the time needed to make them!
I hope, if anything, this post shows you that you can make so many options work that aren’t “cook from scratch” every night kind of meals. It’s great to do that when you can, but not doing that does NOT equate to failure.
Breakfasts
Oats with frozen blueberries and peanut butter and pomegranate seeds. So easy yet satisfying. I’m sort of having a thing with pomegranate seeds currently.
Toast with eggs and my cranberry pomegranate baked oatmeal plus lots of nut butter. For some reason, I neeeed nut butter in pretty much every breakfast and lunch to feel satisfied. And it just tastes so dang good. Anyone else?
Pancakes. Used this recipe.
Frozen waffles with banana, berries, yogurt and peanut butter
Snacks
My hubby picked up this mix at a conference he was at. I’ve heard of Skratch for nutrition performance but have never tried any of their products. These cookies were easy and pretty good!
Speaking of cookies…Hummasapien chocolate chip pomegranate cookies.

I’ve also been really into Perfect Bars lately. Dark Chocolate Chip Peanut Butter and Dark Chocolate Almond are my favorites.
Lunches & Dinners
Pre-chopped butternut squash (I’ve been buying it this way to a) save time and b) save my hand because i’m scared to death every time I chop into a squash), frozen broccoli, frozen tater tots and rotisserie chicken. This may look gourmet but seriously each component was basically done for me so this came together in 2.5 seconds.
Pacific Foods sent me some of their bone broth soups to try. I like these because they have more protein from the bone broth!
We had friends over one night and baked 3 different pizzas. Loved the leftovers for days!
Aldi pumpkin ravioli with veggies
Turkey + cheese + spinach sandwich, eaten at a coffee shop
I grabbed this sample from the FNCE conference, but it made throwing this bowl together super easy! More butternut squash and tater tots plus tuna and greens.
Pumpkin Lentil Curry. This hit the spot with the snow this week. Enjoyed while entertaining a “let-me-pull-up-on-everything” 8-month old.
Bay scallops + pasta + veggies
Sweet potato fries + peanut baked tempeh + quinoa + avocado
Store-bought Chicken salad on toast with clementines + unpictured dark chocolate for more of a satisfaction factor
Oh, and this is a very good wine I’ve been enjoying lately that is moderately priced! I found it on sale at my grocery store for like ~$11.

What foods are you loving lately?
The Robert Mondavi Private Selection line of wine is so good!! We love the Chardonnay, Cabernet Sauvignon and the Merlot. All of those are under $10 which is awesome.
I feel like I’m in a food rut right now which is the worst. I need to explore some new food options for all my meals. Fingers crossed I get out of this rut soon!

I’m definitely a nut butter gal most mornings too. Although lately I’ve been all about eggs, bread, and berries. I love buying the precubed butternut squash too! So great for roasting and throwing it together quickly (#momlife!)
