I surely have a love for coffee and I like reading these “coffee chat” posts from other bloggers, so let’s give it a try while I review some Friday Favorites.
If we were to meet for coffee, I’d probably order a latte. I’m just loving them right now. And, the barista didn’t charge me because it’s my last day here. What a guy!
I would debate ordering a bakery treat but I know that such a thing won’t sustain my energy for long. Instead, I opt for a self-packed protein-filled greek yogurt with all the fruit toppings possible. I also bring a slice of whole grain toast with peanut butter and banana. I know I’ll feel much better starting my day of traveling with a balanced breakfast!
Never skip breakfast – even if you can’t eat within an hour of waking up, try to eat at least something small to jump start your metabolism and prevent overeating later in the day. Protein will help stabilize your blood sugar and prevent spikes that can sometimes lead to cravings.
I’d tell you that I’ve absolutely loved Portland and can’t believe my time has come to an end (I came out here for my final dietetic internship rotation for 10 weeks!). I’d go on and on about what a great experience I’ve had, the sites I’ve seen, the people I’ve met, and how coming out here all by myself has helped me grow exponentially (then I’d decide to save it for a future blog post because there is so much to say).
I’d look at all the people around us in the coffee shop, most of who would be working on their computers or reading the paper, and I’d think how I’d love a job where I could work from a coffee shop. We’d talk about the laidback style of life here, and I’d tell you that I’ve talked to countless people who just picked Portland on the map and drove across the country. They just got up and moved, without a job or plan. I think that’s so brave and respectable and so very cooool, but I’d tell you that it’s probably not for me. I would need some sort of plan (i.e. JOB!) to just pack up everything and move!? Would you?
I mean, I guess if you’re packing up and moving to this view, I understand a little more..
I’d talk about how I’m procrastinating like whoa on my thesis, which I present in less than a month. I can’t believe I graduate so soon – three years of grad school has both flown and crawled by at the same time. I’ve really enjoyed working as a professional during my internship experience where there is less focus on assignments, but I have to teach my brain to refocus again. I feel like I haven’t been on UNC’s campus in forever since before I moved out here, I was doing my clinical rotation in Charlotte. Returning to campus will be nice!
We’d talk about my favorite podcasts because I’m loving some right now! I sort of got into podcasts thanks to Serial, and I now find podcasts as a great way to learn all about different things and I enjoy listening to them on runs, in the car, while I’m making breakfast, etc. Right now, one of my favorites is Happier by Gretchen Rubin because they are short (~20 minutes) and always leave you with little tips and things to do to improve your lifestyle or frame of mind. I go back and forth with a few other nutrition ones depending on my mood. I’d ask you if you have any podcasts you enjoy?
You’d tell me about your job, things you’re loving and then we’d talk about food. I’d say, oh by the way, I won’t be eating meat for a while. You’d ask why, and I’d have to explain. No, I’m not going vegan or anything like that, I’m just stuffed for a while because I finally had the chance to go to Ox, which was a-mazing. Two other girls and I split a meat plate that basically quenched my meat needs for the next month. We had some other sides and dessert too. It came with Grilled Short Ribs, House Chorizo & Morcilla Sausages, Skirt Steak, Sweetbreads, and Fried Potatoes. If you’re not a meat eater, look away….
I left that dinner feeling fuller then I thought was possible! So, when I get back home to NC, I plan on loading up on lots of beans, quinoa, fruits and veggies.
I’d also have to tell about how you must go to the Waffle Window because just loook at this beauty. They have sweet and savory options, but obviously I had to go with the sweet. This is blueberry cheesecake. I just had to try it before I leave.
And then, I’d close with how I can’t wait to be back on the east coast with my husband (we got married right before I moved out here!) and that I can’t wait to get back to cooking more. There’s lots of recipes I want to make and develop. Living in Portland has been great for soaking up all the amazing restaurants, but it’s been sad for my wallet and I’m excited to start grocery shopping again and meal planning. And starting my Charlotte bucket list….
Those are just some of my favorites and things going on. Oh my look at the time – I’d politely tell you I have a flight to catch but this morning coffee sesh was so grounding and just what I needed before flying across the country.
