Good morning! I’m especially chipper because I’m in LOVE with my new blog, thanks to Amanda! New year = new look. She and I email corresponded all weekend and basically became besties in the process. I can’t say enough things about her and how well it came out.
How did you guys spend the first weekend of 2016? Mine was a lot of housework and cleaning and eating. I feel like I accomplished so much around the house which was absolutelyyyy necessary. Thanks Meg for hosting this week in review!
So, let’s do a mini recap from the last 7 days. You guys probably already know that last week I drove back to NC from RI. Driving takes it outta me, ya know? It also makes me like a hungry cookie monster. Something about sitting still makes me want to eat eat eat.
I also cleaned the fridge. I’ve been inspired reading Meg and Cora’s reviews, so I had to do it myself. Minimal pictures were taken because I hateeee cleaning the fridge, but here’s a current picture with edible things in it.
I donated 5 bags of old clothes and sheets to Goodwill today. Man, did that feel good. 2016 will be the year of purging for this gal.
I cleaned out our basement and moved my desk down there because that will be my RD exam study spot!
Friday and Saturday nights were spent at a rehearsal dinner and wedding for some of our friends in Charlotte. The rehearsal dinner was at Terrace Cafe and the wedding/reception was at The Lodge. This was the first wedding we’ve been to since our wedding in August and it was so nice to have no responsibilities except show up, eat, have some hors d’oeuvre (they had mini chicken and waffles!), wine, and bust my moves on the dance floor.
Sunday, I organized our garage and finally uncovered lots of our kitchen toys that I’ll have to start using. These wedding gifts have been hiding for so long but I found themmm!

And then, I cooked and baked. I made a fab-tastic lentil meatloaf, based on this recipe, and you can feel good about yourself because it’s chock full of veggies. Even the hubby approved of this “meatless” meatloaf.
I have so many kale/tahini salads pinned and I finally made a dent. I modified this recipe. I used a cruciferous blend mix from TJ’s rather than straight kale and chickpeas rather than white beans, but nonetheless, the garlic tahini dressing is SO SO GOOD.
And obviously I needed to make dessert too! Thanks, Amanda, for these lovely strawberry oat bars. I didn’t have the energy to make my own jam this time (praise to you, lady!), so I used a natural strawberry jelly and I added goji berries. Drooool.
