Recent Eats, Friday Favorites #13 and Nutrition News

HI lovelies! I’m back for another addition of Friday favorites. I have to give some props to myself for getting this together two weeks in a row! This week was an exciting one – lots of yummy stuff!

Food from the week 

I snacked on  this baked oatmeal all week. I subbed chocolate chips for the raisins and added chopped apples, because there are only a few things better than baked apples + cinnamon.


I’m really digging these Enlightened Roasted Broad Beans as a snack. They are the perfect “crunchy” snack and full of protein and fiber. They sent me a bunch to try, and I’ve been letting clients sample them too! The cocoa dusted is my favorite, but the sweet cinnamon and mesquite bbq are close behind.

Charlotte Restaurant Week! Last night, I went out with the girls for dinner at Essex! Loved their Restaurant Week line up because you got to choose TWO entrees, plus an app and dessert. More food = winning.

Speed workouts in 60 degree weather. Loved having Ed with me – he helped pace me through the intervals and call out my times.

I’m off to take Tater to the groomer, eeeek. I found some images on Pinterest of how I want her to look, I will admit that I am very particular about her curls. I’m that mom, ha.

Any fun plans for the weekend? I’ll be attending a health/fitness expo, getting a long run in, hopefully doing brunch and seeing a movie! The perfect balance, if you ask me.

What’s the craziest thing you’ve ever put peanut butter on? I added it to a veggie burger and liked it!

  1. The baked oatmeal looks tempting! I will follow the ingredients but, I will use chocolate chips, just like you did.
    I think it’s a perfect breakfast, I’ll pin this, and will bake it over the weekend. Yayy! So excited!
    My fun plans for the weekend is to have a barbecue family day, and will take a little dip in the pool with the kids! Btw, do you have any recipes that include pumpkins? Thanks!

    1. Hi Julie, yes it was a delicious baked oatmeal! I also love this recipe, which is similar to the baked oatmeal but uses quinoa and you could add in canned pumpkin: // . I also love these pumpkin granola bars! //

  2. We just had restaurant week here in Charleston. It ended like last week. I went out a few times, a few things were good deals but mostly just if you get an appetizer and dessert. I have had those enlightened crisps and they are good!

  3. Restaurant week is the best! I’ve done it for the past couple of years and can’t wait for Dallas’ one in August.
    I’m attending a yoga class later this afternoon that includes a new year vision board making session.

  6. The “craziest” think I have ever put with peanut butter is baby carrots- which I know isn’t even that crazy lol. Your smoothie bowl and bakes oats look so good! This weekend I am looking forward to Gasparilla in Tampa. Enjoy your weekend girl!

  8. Peanut butter and jelly and pickles is one of my favorite sandwiches! I’ve been looking for a way to make fries with peanut sauce of some sort, so I’ll definitely check that recipe out.
    Weekend plans include not working (haha), and relaxing! Hopefully I’ll see my sister, it’s been too long!

  10. Your weather??? Good grief, that is awesome! And all of those eats! It is about to be RW here in Chicago, we’ll see if we get involved. Right now, we are just trying to figure out what to do night to night! But there are some great restaurants right around us that might be ripe for it 😀

    1. It’s my favorite way to try new restaurants I wouldn’t try otherwise. And I loved the weather while it lasted – it got chilly again this weekend. I have hope for more warm February days!

  11. Those are some gooood looking eats. Excellent choice changing the raisins to chocolate chips. Ever since making your quinoa crumble I’ve had a new love for chocolate + apple for breakfast.
    I’m heading right over to that “manly meat” article as this is something I find reallllly interesting and personally challenging.
    I’ve honestly tried to think of something that peanut butter WOULDN’T be good on… and I really can’t. There’s a restaurant that Dan loves that does a PB burger and he says its incredible. I have no doubts.
    I’m also planning for brunch and to see a movie this weekend. Hope you enjoy!!

  12. So jealous of your warm temperatures and restaurant week. Well it was 60 degrees here Wednesday, but that didn’t last long. And what a good question, craziest thing I but PB on? I guess I need to get more adventurous because mines probably just a sweet potato or chicken.

  13. I love restaurant week! I’m actually going on a triple date tomorrow to a fancy restaurant I could typically not afford. Then I start yoga teacher training on Sunday!

  14. I love that it was warm enough for you to run in a tank top and shorts this week! Ive seen some burger place have PB burgers. I always think about getting it but then get too nervous! But I really want to try it one day.
