Hi, guys. Happy Monday! Are we all feeling rested and rejuvenated from the weekend?

I sure am – our weekend was the perfect combination of fun, productivity and relaxation. And the weather in Charlotte was soooo perfect.

I’m taking the approach of loving Mondays now because they provide a blank slate of things we can accomplish and do. I’m linking up with HoHo’s and Trish’s Weekly Wrap to look at some things from last week and the weekend for my three F’s – food, fitness and fun!

Fun: 

Meeting Siggi at a local dietitian event in Charlotte. There was an awesome yogurt bar, some jokes from Siggi, and he showed us his secret yogurt recipe! He’s very personable and has great stories to tell. Also, his yogurt is da bomb and has lower sugar than similar Greek yogurt brands. You should try it!

Walking around Davidson’s campus – it’s so beautiful and their downtown is the cutest. I didn’t take the most beautiful picture I’ve realized but just imagine endless rows of trees, beautiful brick architectural buildings, and a lively downtown.

Food: Never a dull moment in this category! Last week and weekend brought great food, both in the kitchen and eating out!

Banana Cream Cheesecake from the Cheesecake Factory. I’ve had a small amount giftcard forever, so Ed and I picked up some cheesecake to go. Did you know they’re up to $7.50 a piece per cheesecake?! Hence, why we never go. But, this tasted like heaven and was worth the sugar coma I suffered after.

My first crock pot experience!!! I know – how behind the times am I? I think this will become a regularity. I used this recipe as my base, and it turned out delicious. I think it needed a little more spice though! We used four chicken breasts, and had leftovers for a few meals after. So easy.

I made cinnamon buns! From scratch…well sorta. Thanks to Minimalist Baker’s super easy recipe. I feel so accomplished. These were so buttery and flakey, and full of deliciousness. Honestly, I was afraid I wouldn’t activate the yeast right or they wouldn’t rise, but alas, success! Next up, I’ll be baking a cake from scratch on Food Network – watch out!

Exercise:

This was a heavier running mileage week, probably due to the nicer warmer weather and sun. I Ran 40 miles for the week! Some longer, some shorter but happy with how I was feeling!

I also made it to three hot yoga classes last week, which felt amazing both mentally and physically. Supplementing my running and using it to stretch (and for strength) has been so invigorating.

I also did alot of walking, and listening to podcasts. Never underestimate the power of a good walk!

Aside from the 3 F’s, I published two new recipes, including a strawberry coconut overnight oats recipe for American Heart Month and a cheesy veggie gnocci with pancetta, and we got a lot of house cleaning done too!

  2. LOVE siggi’s yogurt! It tastes so good and it makes me happy that it’s so much lower in added sugar compared to other varieties.

    I can’t believe this was your first time using a crockpot. I use mine at least twice a week, haha! It’s amazing. I just made crockpot chicken tikka masala last night 🙂

  4. Girl, I’m usually behind on times in everything but I’m one up on you with the crockpot! I love to make taco soup in mine, oh and potato soup too is a great family meal that they love!!! Thanks for linking up with us Sarah!

  5. I won a year’s worth of Siggi’s yogurt last year. I was so disappointed that our local stores did not carry it. I passed it on to another blogger that could use it though. My favorite crockpot meal is chicken breasts covered in a half jar of your favorite salsa, which is usually mango or pineapple at our house. I serve it over rice or couscous. How easy is that? I tried making cinnamon rolls in my younger years and never could get the yeast to rise and just gave up. I’ll definitely take a look at this recipe. Thanks for linking with us Sarah!

  6. I never realized Siggi was a real person. I sure do love his yogurt.

    I have walked by the Charlotte Cheesecake factory but never been. I’ve only been to one of them and I thought it was okay, but probably not the best value for the price and being a chain restaurant. I’d kinda rather go to a local bakery or something.

    Congrats on your training and getting some great runs in! NC is a really awesome place to run with a ton of races.
