Hi, guys. Happy Monday! Are we all feeling rested and rejuvenated from the weekend?

I sure am – our weekend was the perfect combination of fun, productivity and relaxation. And the weather in Charlotte was soooo perfect.

I’m taking the approach of loving Mondays now because they provide a blank slate of things we can accomplish and do. I’m linking up with HoHo’s and Trish’s Weekly Wrap to look at some things from last week and the weekend for my three F’s – food, fitness and fun!


Meeting Siggi at a local dietitian event in Charlotte. There was an awesome yogurt bar, some jokes from Siggi, and he showed us his secret yogurt recipe! He’s very personable and has great stories to tell. Also, his yogurt is da bomb and has lower sugar than similar Greek yogurt brands. You should try it!

Walking around Davidson’s campus – it’s so beautiful and their downtown is the cutest. I didn’t take the most beautiful picture I’ve realized but just imagine endless rows of trees, beautiful brick architectural buildings, and a lively downtown.


Food: Never a dull moment in this category! Last week and weekend brought great food, both in the kitchen and eating out!

Banana Cream Cheesecake from the Cheesecake Factory. I’ve had a small amount giftcard forever, so Ed and I picked up some cheesecake to go. Did you know they’re up to $7.50 a piece per cheesecake?! Hence, why we never go. But, this tasted like heaven and was worth the sugar coma I suffered after.

My first crock pot experience!!! I know – how behind the times am I? I think this will become a regularity. I used this recipe as my base, and it turned out delicious. I think it needed a little more spice though! We used four chicken breasts, and had leftovers for a few meals after. So easy.


I made cinnamon buns! From scratch…well sorta. Thanks to Minimalist Baker’s super easy recipe. I feel so accomplished. These were so buttery and flakey, and full of deliciousness. Honestly, I was afraid I wouldn’t activate the yeast right or they wouldn’t rise, but alas, success! Next up, I’ll be baking a cake from scratch on Food Network – watch out!

This was a heavier running mileage week, probably due to the nicer warmer weather and sun. I Ran 40 miles for the week! Some longer, some shorter but happy with how I was feeling!

I also made it to three hot yoga classes last week, which felt amazing both mentally and physically. Supplementing my running and using it to stretch (and for strength) has been so invigorating.

I also did alot of walking, and listening to podcasts. Never underestimate the power of a good walk!

Aside from the 3 F’s, I published two new recipes, including a strawberry coconut overnight oats recipe for American Heart Month and a cheesy veggie gnocci with pancetta, and we got a lot of house cleaning done too!

  1. Those cinnamon buns look heavenly, nicely done! I’ve never made cinnamon buns – to me they’re intimidating. I love making soups in the crockpot. But- over Christmas, I made these chocolate peanut candies for gifts, so those just might be a tie with the soup 🙂

  2. What a cool experience meeting Siggi! My go to crockpot recipe is the easiest thing ever. just a jar of your favorite salsa and a package of chicken breasts-that’s it! I like putting the chicken/salsa mix on top of my salads for a quick, weeknight dinner.

  5. I feel like such a mad scientist when cinnamon rolls turn out right! It is a hard task to complete, so good job!!
    Isn’t this weather incredible? I feel guilty spending so much time inside working on school work, but I’d probably say the same if I wasn’t working on school work, haha. I love being able to dine outdoors.

  6. I always make homemade cinnamon rolls for Christmas morning. There’s just something wonderful about the warm cinnamony smell that makes me think of the holidays.
    Awesome job on the high mileage week! The weather has been nicer here too! I love it!

    1. I love Christmas morning traditions and homemade cinnamon rolls sound amazing! My mom used to make something similar and it was divine. This weather is tempting me for spring to arrive.

  7. I am super jealous of that yogurt bar! I love making different bowls & combos! And my dream for when I grow up is to have a HUGE southern style front porch so I can do things like enjoy brunch & endless cups of coffee while I enjoy the weather & watching everyone go by.

    i think my favorite crockpot recipe is

    ^I simplify by using one BIG can of pinto beans, no other types. & I find it’s flavorful enough from the salsa verde without all the other spices. I use 2 big chicken breasts not one, & I would definitely recommend the optional jalapeno.

  8. Those cinnamon buns look so good. I have bookmarked the recipe just in case I want to try them. we also think Cheesecake Factory is overpriced. While in Miami recently, they messed up my order and we were given a free dessert that we ahared

    1. I think it’s a great recipe for first timers making cinnamon buns, like I was. That’s a bummer that they messed up your order, but I’m glad you got a free dessert! 🙂

  10. True story – my bestie and I take eachother to The Cheesecake Factory for each others birthdays. All we do is drink coffee and order cheesecake. We both just get traditional [because we loveeeeee that cheesecake flavor!] but we still end up in a sugar coma after. Its totally worth the belly ache though!! 🙂

  11. What a great week! I tried making cinnamon buns once but they ended up kind of falling apart. We had warmer weather this weekend that definitely motivated me to get outside and run when normally i would have taken a rest day!
