How are you guys doing today on this Monday morning? It’s been a while since I’ve shared a recipe but I’m excited about this one.
It uses my absolute favorite ingredient: sweet potatoes. They just seem to appear in like 75% of my recipes. I’m okay with it and I hope you are too.
Oatmeal and sweet potatoes just go together so well, especially if you’re doing some oatmeal meal prep.
My Australian sister came to visit this weekend. For new readers, I should clarify, she’s not really Australian but she’s living there for the year. In grad school.
So, it was precious for her to finally meet her niece. Our weekend was actually rather low key, considering she had like 24 hours of travel to get here. And who knows how many time zones she crossed.
We went to a coffee shop, got some donuts, went to a brewery, and got some custard (ice cream). And spent lots of time enjoying the back deck vibes and getting baby cuddles.
Okay, back to this Sweet Potato Blueberry Baked Oatmeal. It’s not an overly fruity oatmeal, but you’re getting the benefits and nutrition of both fruits AND veggies.
There’s not many recipes you can say that about.
What Do You Need To Make Sweet Potato Blueberry Baked Oatmeal?

- maple syrup (I recommend grade A all the way)
Why Should You Do Oatmeal Meal Prep?
Summer oatmeal is different from winter oatmeal. Summer oatmeal can be a great way to do oatmeal meal prep. In the summer time, hot oats can move to the wayside. I still love them, but more often, I depend on the cooler overnight oats, baked oatmeal, or baked oatmeal cups. Also, Baked Steel Cut Oatmeal is also a favorite because it’s totally hands-off.
Anyway, I think you’ll agree that baked oatmeal is great any time of year because it’s easy. You make it once and then reap the benefits for days, which is why it’s a great form of oatmeal meal prep.
You could make a few and have them last for a week. This is another one of the recipes I made “pre-Camryn” and froze (like this meal prep roundup).
Sadly, I ate the last of this blueberry baked oatmeal last week but already made some more summer oatmeal for this weekend.
I just think sweet potatoes and blueberries go together SO WELL.
I don’t know what it is but they are made for each other, especially in this oatmeal and sweet potato concoction. Almosssst as good as PB&J.
Remember my blueberry sweet potato bread? This is a fun twist on that. Ultimately, both have the same purpose: to be slathered with peanut butter and devoured.

We also have hints of cinnamon, butter and some maple syrup in here. So every bite is literally, the best thing ever.
I say it’s great for breakfast, but to be honest, I like the fruity oatmeal for dessert too.
So much natural sweetness from fruit and maple syrup, plus blueberries and cooked sweet potatoes. Top it with ice cream and you’ll impress anyone.
While I’ve told you how delicious this is, let me reinforce how EASY this oatmeal meal prep dish can be.
How To Make Sweet Potato Blueberry Baked Oatmeal
You’ll just need two bowls for this sweet potato blueberry oatmeal. Mix the wet ingredients and in a separate bowl, mix the dry ingredients.
You’ll then mix them both and pour them into a casserole dish and bake for 30-35 minutes.
This Sweet Potato Blueberry Baked Oatmeal is the perfect quick breakfast option and great as an oatmeal meal prep dish. It’s ready in 30 minutes, great for crowds, and the perfect pre- workout snack!
- 2 cups uncooked rolled or old fashioned oats
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 1 1/2 cups milk (I used 1%)
- 2 large eggs
- 1 cup mashed sweet potato, cooked
- 1 1/2 Tbsp butter, melted
- 1/3 cup maple syrup, plus more for drizzling
- 1 tsp vanilla extract
- 2/3 cup blueberries
- Preheat oven to 350 degrees.
- Coat the inside of a 2 quart baking dish with butter, oil or non-stick spray.
Mix dry ingredients (oats, baking powder, salt, cinnamon).
- Beat in milk, eggs, sweet potato, butter, maple syrup, and vanilla extract.
- Mix all ingredients together, saving blueberries for last to prevent staining and/or crushing, and spread inside the dish.
- Bake for 30-35 minutes, until oats are tender and moisture has been absorbed.
- Drizzle with a little maple syrup, to taste.
Note: You can use frozen blueberries in this recipe too.
