Chocolate Peanut Butter Coconut Balls

– ½ cup oats – 1/3 cup coconut flour – 1/4 cup coconut flakes + more for topping – ½ cup peanut butter – 1/3 cup honey – ¼ cup cocoa powder – 1 tsp vanilla extract – 1-2 tbsp almond milk

Step 1

Mix all ingredients in bowl except extra coconut flakes, and transfer to food processor or high speed blender. Process for 30 seconds to 1 minute. Be careful not to over process.

Step 2

Add the final coconut flakes after processing. If dough is too dry, add 1-2 tbsp of almond milk to smooth it up.

Step 3

Form into 12 one-inch balls. Transfer to fridge for 30 minutes to firm up. Enjoy!
