Quinoa Pizza Bites

Bucket List Tummy

Prep: 10 Mins

– 1 cup quinoa, cooked and cooled – ¼ cup gluten free breadcrumbs – ½ cup shredded cheese – Handful spinach or kale, chopped – ¼ cup chopped tomatoes – 1 egg

Cook: 15 Mins


– ½ tsp garlic powder – ¼ tsp salt – 1/8 pepper – 2 tsp Italian seasoning – Pinch red pepper flakes

Step 1

Cook quinoa as directed. I like to do 1 cup of quinoa to 2 cups of water/broth, but do it slowly to keep the quinoa fluffy. Preheat oven to 400 degrees.

Step 2

Line a baking sheet with parchment paper and spray with cooking spray. Then mix all of the ingredients in a medium bowl. 

Step 3

Roll into small meatballs, leaving about an inch between each on the parchment paper.

Step 4

Bake for 13-16 minutes, turning halfway through for even cooking. Enjoy!
