Spinach Sweet Potato Tater Tots (Toddler Approved)

– 2 cups sweet potatoes (about 2 medium), mashed – 2 cups spinach – 1 cup breadcrumbs – 1 egg – 1/2 cup shredded cheese – 1 T Italian seasoning – ¼ tsp sea salt – ½ tsp garlic powder

Cook: 30 Mins


Step 1

Preheat oven to 375. While oven is preheating, microwave sweet potatoes for 5-6 minutes, or until softened. Let them cool.

Step 2

Add spinach to blender or food processor and process until it has a shredded texture.

Step 3

Once sweet potatoes have cooled, separate filling from skin. Discard skin or save it for future use. Mix sweet potato filling with shredded spinach.

Step 4

Prepare breading by mixing breadcrumbs, egg, shredded cheese and spices. Add breading to sweet potato mixture.

Step 5

Shape batter into tater tot shapes and spread over baking sheet with parchment paper, spacing about ½-1 inch apart.

Step 6

Bake for 28-30 minutes or until slightly browned on the edges. Serve with ketchup, guacamole or hummus. ENJOY!
