Strawberry Baked Oatmeal

– 1 ½ Tbsp butter, melted – 2 cups oats (rolled or old-fashioned) – 1 ½ tsp baking powder – ¼ tsp salt – 2 tsp cinnamon – 1 ½ cups milk of choice (I used 1%) – 2 large eggs

Ingredients

– 2 bananas – ⅓ cup maple syrup, plus more for drizzling – 1 tsp vanilla extract – 1 ½ cups strawberries, chopped – ½ cup chocolate chips, optional – 1 Tbsp brown sugar

Step 1

Preheat oven to 350 degrees. Coat the inside of a 2 quart baking dish with butter, oil or non-stick spray.

Step 2

Mix dry ingredients (oats, baking powder, salt, cinnamon).

Step 3

Beat in milk, eggs, 1 banana, maple syrup, and vanilla extract. Add in strawberries and chocolate chips, reserving some for topping.

Step 4

Pour batter inside the dish, adding a final layer of strawberries and sliced bananas on top. Sprinkle with brown sugar.

Step 5

Bake for 30-35 minutes, until the oatmeal is tender and moisture has been absorbed. ENJOY!
