Hi friends!
I hope you had a wonderful weekend. We had a busy one, complete with a long run and some outdoor fun, a wedding, and some wonderful eats.
On Thursday, I was invited to a press opening for the Wine and Tapas week in Charlotte, which is going on now. This is the first time they’ve tried it here, but it’s similar to Charlotte Restaurant Week in which you get to choose a couple tapas with some wine for a fixed $30 or $35 price. We mingled a little bit and tried some of the offerings from Stoke, Dogwood and Evoke.
And then, Ed and I wanted more food so we hopped over to Cowbell, because when I have cravings for a burger, I pretty much try to satisfy them immediately! We split some pretzel bites, a burger and some fish tacos, with some of the better sweet potato tots I’ve found in Charlotte (aside from Bad Daddy’s).
The tots were sweet, with hints of honey and cinnamon and I was such a sucker.
I ended up doing my long run on Friday at the White Water Center, since we had a wedding on Saturday and Sunday called for thunderstorms. We brought Tater along for the fun, so she could hang out with Ed while I ran. She’s such a happy puppy!
It was hot, but at least the trails were shaded. The only con was the plentiful hills in the trails. This one wasn’t done for speed, and I don’t think my GPS was fully accurate, but I ran for time. I ran for 2 1/2 hours which definitely worked me pretty hard.
And then after my run, we stayed and hung out for Tuck Fest, with live music, rock climbing and other competitions, food trucks, beer and TONS OF PEOPLE AND DOGS. The White Water Center is basically an adult’s playground. It has white water rafting, ziplining, mountain biking and running trails, a full restaurant, kayaking, and so much more. You buy a day pass and it’s easy to have enough to do for the whole day! Adventurers, rejoice!

Saturday
On Saturday, we drove down to Columbia for the day for a coworker’s wedding. We stopped for some coffee/donuts on the way, and then had lunch at DiPrato’s.
For lunch, I got some sort of chicken panini with prosciutto, cheese, roasted red peppers and artichokes, and a side of very addicting pasta salad.
It was a beautiful day for a wedding! The reception was in an old bank and was so cool to see the old vault.
After the wedding, we drove back up to Charlotte. Our good friends had agreed to watch Tater for the day, and they ended up taking her out on the lake. She has never been swimming before, but they put a life jacket on her 🙂 They were sending us snap chats throughout the day, and Tater seemed to have a great time!
We brought over some Mexican food for them for dinner and hung out before we all decided it was bed time.
Sunday
Sunday was a rainy blah morning, so I decided I would make some pancakes. I saw Kylie post something about using pancake batter to make cinnamon rolls on her instagram story, so I immediately changed the game plan and did that. I think I need a better dough/liquid ratio next time, but these were so easy to make and ready in 10 minutes. And we topped them with a peanut butter/greek yogurt icing.
And then we did some garage cleaning and organizing (blah), and I did some meal prep for the week while snacking on some macaroons. I had a wild sweet tooth on Sunday.
I also made a new pasta salad recipe that will be debuting on the blog soon!
And that’s a wrap! That’s a typical weekend of eats for me.

Wow…how’d you pack all of that in to one weekend?! Sounds like a fun time! So much yummy food! I had a lot of good eats this weekend too–favorite was probably a veggie sushi platter at my baby shower!

I love your blue dress for the wedding. I find that because I run a lot, my feel KILL in heels. Does that happen to you?
Thanks Ellie! I hate heels, I’ve never been good walking in them and yes, they kill my feet. The heels never stay on too long 🙂

That is SO cool that you made cinnamon rolls out of pancake batter; that’s a genius idea. And Tater is adorable in that life jacket. I love the enthusiasm of our dogs; they always make me excited to be alive especially when we go on a run or walk together. Sometimes, they give me ‘mini heart attacks’ because of things they do, but I’m so thankful God has used them to teach me so many lessons…
And you had an amazing weekend; weddings are so fun aren’t they? That reception venue looks pretty unique. It’s neat that every wedding/reception always reflects the unique personality of the couple.
The enthusiasm is contagious! Especially in puppies. Can be exhausting but amazing at the same time. Weddings are so fun, and I love how each one is so special and unique.
You guys look so nice all dressed up for the wedding! You sure did do alot this weekend! Nice job getting your long run done. Al the food looks delicious!

Geez louise your choice of cuisine is knocking it out of the park this week. What a fun weekend!! You and Ed are so amazing at taking up opportunities and always doing things that are going on. Not to mention being adventurous and keeping the fun in life. I love it so much. That bank looks incredible for a wedding venue! I also need to google pancake batter cinnamon buns and try this myself.
Sometimes I feel like some slow down time would be nice, but we try to live in the moment as much as possible. I need to change a few things from how I did it last time, but I think the thought of pancake batter cinnamon buns is genius.
Reading this on a Monday Morning at work and I am now craving all this food!!! Great post and love the dress you wore at the wedding, beautiful!

I think the best thing I ate was dinner tonight: a veggie, potato and chickpea curry. Simple, fast and delicious! And that pasta salad recipe of yours looks scrumptious!
