Weekly Eats & Adventures

Hi there and happy Friday!

It was a good week and now we’re at the beach for some R&R. This is Camryn’s first visit to the beach so I’m SO excited to see her take it in. I know she won’t remember this trip, but I hope as she gets older we have some fun family trips to the beach. I grew up doing family trips to Atlantic Beach and I have soo many fond memories of those times! Follow along on Instagram for more up to date adventures I’ll be sharing!

So, in relation to Monday’s post, I already feel more grounded and at peace with putting the gym membership on hold. Rather than worrying about “getting my money’s worth” or fitting in a class during a hectic schedule, I didn’t have to do that. I could run/walk when I want to, and I even went to some yoga classes.

I really think midday yoga classes should be a requirement in our culture that promotes, “Do Do Do.” We are overworked and overstressed. A midday yoga class is such a treat, but a great way to incorporate some downtime (Which I totally think can spark more creativity and productivity), movement, stretching and self care. I want to do more of this.

This week I also got one longer run in, got my flu shot, and had a ladies night out.

Here is what some eats have looked like lately around here.

I’m totally back on my oatmeal kick (remember how I was repelled by oats during late pregnancy? …how?). I made pancakes over the weekend too when I had some more time.

And my favorite, a chai carrot cake donut from my favorite coffee shop.

Toast – one sweet and one savory, always!

I think snacks have been my main form of intake. I’ve done well prepping some and just ALWAYS having them on hand. For the days I’m away from Cam, I have to pump and I’m non-stop hungry since I think my body is working harder to get more milk out. I snack incessantly on those days.

Energy bites! Yum. These were 1 cup peanut butter, 1/2 cup honey, 1/4 cup cranberries, 2 Tbsp chia seeds, 1/4 tsp salt, 2 cups oats, 1/2 cup shredded coconut.

Fruit! Farmers Market yummies.

Crackers with chicken salad.

Strawberries before yoga class.

Kind bars always coming to the rescue.

Still on my weekly granola kick. I hope to share this recipe soon if I can get myself to photograph it one more time!

I bought a loaf of cinnamon raisin bread and a slice of pumpkin cake and slice of chocolate cake from the farmers market too. They did not last long. I like they slathered with peanut butter:)

I’ve also been loving cottage cheese + peanut butter lately.

Fried eggs are always my go to quick meal. Thrown on top veggies and quinoa and with a bar.

Pizza, two nights in a row. One from a frozen box, one fresh.

Salmon, veggies and potatoes (that I chose to eat first lol)

Turkey meatballs, broccoli, and seasoned potato wedges (these look like kids meals because I was trying to prep things that Cam could grab. She still hasn’t eaten much yet).

Asparagus fries and crab dip with bacon with a glass of wine. This was a much needed girls night at a restaurant on the lake.

Whole Foods Salad Bar – my favorite parts about this were the random mixtures. I got BBQ jackfruit which was actually pretty tasty and a pasta salad that I could eat every day. I also loved the cabbage and chicken thighs – so much flavor! There’s a bed of greens underneath.

What foods have been making it onto your plate a lot recently?

Do you have memories of the beach when you were a little kid?

  1. I love how you’re going to work out without feeling the obligation of having to get your money’s worth at the gym.

And I’m totally missing peaches now seeing those beautiful farmer’s market peaches. 🙂

And Carrot Cake chai donut? I just bought some carrot cake today, and that makes me excited to have some.

    1. Yes! At the same spot. You know once you book your ticket here that’s the first place i’ll take you.

  2. Yoga or a true break in the middle of the day should definitely be a mandatory thing! I feel so refreshed after my lunch break regardless of whether I leave to let Bailey out or stay at work and read.

If you make the granola again, I’d love the recipe! One thing I’ve been snacking on a ton is plantain chips this week. So good.

Enjoy your beach trip! I hope Cam loves the water and sand/

    1. It really helps with concentration and stress level, too. Plantain chips are so good, I always forget about those.
