Easy Bruschetta Chicken Sandwich

– 2 medium chicken breasts – ¼ cup sundried tomatoes – ¼ cup diced tomatoes  – 1 tsp minced garlic – ¼ tsp Italian seasoning – 2 Tbsp balsamic vinegar – ½ Tbsp brown sugar – 3 Tbsp olive oil – ¼ tsp salt – 1/8 tsp pepper – 2 Kaiser rolls  – 2-3 oz fresh Mozzarella cheese – 2 Tbsp fresh basil

Step 1

Pat your chicken dry and season with salt, pepper and garlic powder.

Step 2

Drizzle olive oil on skillet and cook chicken over medium high heat, for 4-6 minutes per side, or until chicken is cooked through to 165 degrees.

Step 3

While chicken is cooking, make your bruschetta by combining sundried tomatoes, diced tomatoes, garlic, Italian seasoning, balsamic vinegar, brown sugar, olive oil, salt and pepper in a small bowl.

Step 4

Grill or toast your rolls if desired. Add cooked chicken on top of your roll, and top with mozzarella cheese. Add the bruschetta mixture, and then garnish with basil, salt and pepper. Enjoy!
