Frozen Trail Mix Bites

- 1/2 cup peanut butter - 1/2 cup coconut oil, melted - 3 Tbsp honey - 2 Tbsp chia seed/flax seeds - 1/2 cup soy nuts - 1/2 cup pepitas - 1/3 cup chocolate chips

FREEZE: 40 MINS

Ingredients

Step 1

In a medium bowl, combine peanut butter, coconut oil, honey, and chia/flax seeds.

Step 2

In a separate bowl, combine soy nuts, pepitas, and chocolate chips. Spray a muffin tin with cooking oil and divide the nut/seed mixture into the muffin cups (about a tablespoon of each).

Step 3

Pour the liquid peanut butter mixture over the nuts mixture until the cups are 2/3 full.

Step 4

Lay the muffin tin flat in the freezer for about 35-40 minutes, or until the cups are frozen solid.  

Step 5

Once frozen, carefully remove trail mix bites from muffin tin by sliding a spoon under the bottom of the trail mix bite. Place in freezer-friendly bag and keep stored in the freezer.
