These Trail Mix Bites are a delicious frozen healthy snack, full of protein, fiber and nutrition. They taste best out of the freezer but can also be enjoyed thawed at any time of day.

As a Registered Dietitian, I truly think the freezer is underutilized when it comes to healthy snacks.
Take, for instance, these fun and healthy no bake cookie dough bites – delicious and healthy!
Easy to freeze for a longer shelf life, and even better, thawed by lunchtime if you throw them in a kid’s lunch or save them as an after school snack.
Many people think to freeze muffins and quickbreads, but these easy trail mix bites are novel, yet make so much sense!
I mean, take them out of the freezer and they are thawed by lunchtime for an easy addition to a kid’s lunchbox.
Or, enjoy them as easy road trip snacks or a hiking snack and they won’t be melting all over your pack!
There’s something about trail mix as a quick snack that this active dietitian loves. These homemade trail mix bars are another fun option!

- High in protein – These trail mix bites are extra high in protein (and fiber) thanks to the soy nuts. If you’ve never had soy nuts, they are delicious and crunchy and add a caramel flavor, which works perfectly in these trail mix energy bites.
- Great for kids– While I love to grab one of these little bites out of the freezer for an extra pep in my step, my little ones love them even more. My 6 year old loves them as a healthy dessert before bed. They can be a great replacement for storebought granola bars.
- Great for meal prep – Since these keep so well in the freezer, they are great for meal prep and a wonderful freezer snack! Make them in advance for a busy week or load up for a nourishing postpartum snack or an energy-dense snack for a breastfeeding mom.
- Gluten Free and can be vegan – If you need gluten free snacks, these healthy trail mix protein bites are for you! They can also be made vegan by swapping out the honey for maple syrup.
Ingredients
Here’s what you’ll need to make these trail mix granola bites.
- Peanut butter – I recommend this drippy peanut butter for the best and tastiest results. You could also use almond butter or sunflower seed butter.
- Coconut oil – I would not recommend substituting this with another liquid oil or these trail mix bites won’t freeze as easily or quickly.
- Honey – If you want to keep these vegan, you can use maple syrup.
- Chia seeds or flax seeds – I love adding chia seeds or flax seeds to recipes – so many health benefits! If you like both, you can use this blend These little seeds add so many healthy fats!
- soy nuts – If you can’t find these in your local grocer, you can likely find them in a specialty store or on Amazon
- Pepitas or pumpkin seeds
- Chocolate chips – I love Enjoy Life for vegan chocolate chips and dark chocolate chips.
- Other optional additions – raisins, coconut flakes, white chocolate chips, sunflower seeds, dried fruit, m&m’s, chocolate candies, etc.
Note that you can use any nuts or seeds you prefer.
Just make sure not to overload the batter with too many ingredients because they won’t freeze as quickly – you want to make sure you still have the melted coconut oil, peanut butter and honey liquid mixture around everything.
How to Make Frozen Trail Mix Energy Bites
The best part about these trail mix energy balls is the ease in which you can make them and it’s based on healthy ingredients.
In a large bowl, combine the creamy peanut butter, melted coconut oil, honey, and chia/ground flax seeds.
In a separate bowl, combine the soy nuts, pumpkin seeds and chocolate chips – or any other nuts/seeds or trail mix essentials you choose to add.
Then, add the nut/seed mixture into a greased muffin tin – just add about a tablespoon of each.
You could also make them in mini muffin cups as mini trail mix bites. Follow the same instructions but freeze them in a mini muffin tin!
Then, pour the liquid peanut butter and honey mixture over the nuts mixture until the tins are 2/3 full.
The hardest part is allowing 30-40 minutes for them to freeze!
Then, pop them into the freezer (keep the muffin tin level) and once they’re frozen, use a spoon to scoop underneath them to spoon them out.
I think that these are stored best in the freezer! However, you can also enjoy them thawed or at room temperature.

Frozen Trail Mix Bites
These easy trail mix bites are a perfect snack for an active lifestyle! Filled with protein, fiber and micronutrients, theyโre an easy on-the-go snack, lunchbox snack or fill-you-up snack!
Ingredients
- 1/2 cup peanut butter
- 1/2 cup coconut oil, melted
- 3 Tbsp honey
- 2 Tbsp chia seed/flax seeds
- ยฝ cup soy nuts
- ยฝ cup pepitas
- 1/3 cup chocolate chips
Instructions
- In a medium bowl, combine peanut butter, coconut oil, honey, and chia/flax seeds.
- In a separate bowl, combine soy nuts, pepitas, and chocolate chips
- Spray a muffin tin with cooking oil and divide the nut/seed mixture into the muffin cups (about a tablespoon of each).
- Pour the liquid peanut butter mixture over the nuts mixture until the cups are 2/3 full.
- Lay the muffin tin flat in the freezer for about 35-40 minutes, or until the cups are frozen solid.
- Once frozen, carefully remove trail mix bites from muffin tin by sliding a spoon under the bottom of the trail mix bite. Place in freezer-friendly bag and keep stored in the freezer.
