- 3 Tablespoon oat flour - 1.5 Tbsp peanut butter - 2 teaspoons of maple syrup - ¼ cup mashed sweetpotato - 2 Tablespoons almond milk - 1/4 teaspoon vanilla extract - ½ teaspoon baking powder - Pinch of salt - 1 Tbsp mini chocolate chips, optional
Mix all ingredients in bowl and transfer to a greased mug or ramekin.
Microwave for 75-90 seconds each. If you like your cake softer,cook for less time. Allow to cool for 3-5 minutes before eating.
Enjoy – pair with ice cream, yogurt, more chocolate chips, fruit, etc.
