Here’s what you’ll need to make this healthy mug cake in the microwave.
- oat flour – you can grind up oats in a high speed blender to make your own or buy pre-ground oat flour. Use certified gluten-free oats if needbe. White whole wheat flour is my favorite alternative!
- peanut butter – Almond butter or any other nut/seed butter also works! I love this drippy peanut butter.
- maple syrup – You can also use honey (not vegan), coconut sugar or brown sugar.
- mashed sweetpotato
- almond milk – I prefer a light almond milk, but cashew milk, soy milk, or even dairy milk can work.
- vanilla extract
- baking powder – This small but mighty ingredient helps the mug cake rise.
- mini chocolate chips, optional – Enjoy life are vegan if you’re looking for a vegan microwave mug cake.
- pinch of salt – adds so much flavor!
- microwave-safe mug or ramekin
Fun Ideas For a Twist
- For a chocolate sweetpotato mug cake, try adding 1/2 Tbsp of cocoa powder. It tastes like a mini chocolate sweetpotato cake!
- To add more protein, throw a scoop of your favorite protein powder in!
- If you want some nutrient-dense additions for kids, add a tsp of flax seeds or chia seeds.
Note that I haven’t tried this recipe with alternate flours, like coconut flour or almond flour. Coconut flour is more dense so it may not work as a 1-1 replacement.

This recipe is so simple – you won’t believe it.
Just mix all of your ingredients in one bowl, and then transfer to a greased mug or ramekin.
Microwave for up to 90 seconds!
Make sure to allow a few minutes to cool, and then top with your favorite toppings or pairings.

This sweetpotato mug cake is ready in minutes and is a great single-serving dessert or snack. Made with a handful of healthy ingredients you probably have on hand, this microwavable mug cake is also gluten free and vegan.
Ingredients
- 3 Tablespoon oat flour
- 1.5 Tbsp peanut butter
- 2 teaspoons of maple syrup
- ¼ cup mashed sweetpotato
- 2 Tablespoons almond milk
- 1/4 teaspoon vanilla extract
- ½ teaspoon baking powder
- Pinch of salt
- 1 Tbsp mini chocolate chips, optional
Instructions
- Mix all ingredients in bowl and transfer to a greased mug or ramekin.
- Microwave for 75-90 seconds each. Microwave strength varies, so adjust accordingly. If you like your cake softer,cook for less time. Allow to cool for 3-5 minutes before eating.
- Enjoy – pair with ice cream, yogurt, more chocolate chips, fruit, etc.
