Baby Oatmeal Cookies

Baby oatmeal cookies are rich in fiber and nutrients and contain no added sugars. Oatmeal cookies are perfect as baby breakfast cookies or a healthy baby snack any time of day!

Ingredients  

  • ½ cup mashed sweetpotato
  • ½ cup quick cooking oats
  • ½ cup oat flour or chickpea/almond/whole wheat flour
  • 2 Tbsp peanut butter
  • ½ tsp baking powder
  • 1 egg
  • 1/3 cup applesauce

Instructions 

  1. Preheat oven to 350 degrees F.
  2. Microwave your sweetpotato for 5-7 minutes, or until cooked through and let cool. You could also use leftover mashed sweetpotato.
  3. In a medium bowl, combine cooked and cooled sweetpotato, oats, oat flour, peanut butter, baking powder and egg.
  4. Form batter into small bites about the size of a tablespoon. Arrange on greased baking sheet. Press down to flatten each cookie slightly.
  5. Bake for 9-11 minutes (mine were perfect at 10 min), or until edges start to look golden.
  6. Let cool on wire rack before serving.
