Baby Waffles

Baby waffles are a great first food for babies. These sweetpotato waffles for baby are free of added sugars and full of healthy ingredients for your little ones.

Ingredients  

  • 1 cup oat flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 cup milk
  • 2 T butter, softened
  • ½ cup mashed sweetpotato
  • 1 egg
  • ½ cup spinach

Instructions 

  1. Mix your dry ingredients in a bowl (oat flour through cinnamon). To make oat flour, simply grind oats in a blender or food processor.
  2. Mix wet ingredients in a blender (milk, butter, sweetpotato, egg, spinach). The spinach will break down.
  3. Mix dry and wet ingredients together until just incorporated.
  4. Grease waffle maker with butter or spray. Pour ¼ cup of batter in waffle maker and cook for 2-4 minutes, or until golden brown.
  5. Repeat with remaining batter.
  6. Serve with fruit or favorite toppings.

Notes

1. The recipe is not meant to be overly sweet, since it is baby friendly waffles, although the sweet potatoes offer natural sweetness. To add more sweetness, try some of the topping ideas.
2. Topping ideas: Banana, berries, peanut butter, hemp seeds, chia seeds, yogurt, butter, honey, maple syrup, etc.
