Bacon Wrapped Sweet Potato Fries with Lime Yogurt Sauce

Bacon Wrapped Sweet Potatoes are an easy, family-friendly appetizer or snack that requires minimal ingredients and prep time. Just stick them in the oven or air fryer and you're done! Paired with a delicious and refreshing lime yogurt sauce, these are irresistible!

Ingredients  

  • 2 medium sweet potatoes, cut into wedges
  • 2 Tbsp olive oil
  • 6 slices of bacon, cut in half
  • ½ tsp salt
  • ¼ tsp paprika
  • 1/8 tsp tsp pepper
  • toothpicks

Lime Yogurt Sauce

  • 1/2 cup greek yogurt
  • 1 lime, zested or 2 Tbsp lime juice
  • 1/2 Tbsp honey

Instructions 

  1. Preheat oven to 350°. Mix olive oil and seasonings in a small bowl. Toss to coat over sweet potatoes.
  2. Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick.
  3. Place on a parchment-lined 15x10x1-in baking pan.
  4. Bake until bacon is crisp and sweet potato is tender, 40-45 minutes, flipping halfway through.
  5. Serve immediately with yogurt lime dipping sauce. 

Notes

You can store these for up to 4 days in the fridge.
