Basil Spinach Pesto Without Nuts

Spinach pesto without nuts requires only a handful of ingredients and is ready in minutes. Use it on your favorite salads, pastas, pizzas and more!

Ingredients  

Roasted Sweetpotatoes

  • 2 medium sweetpotatoes, washed and diced
  • 2 Tbsp avocado oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp pepper

Nut Free Basil Pesto

  • 3 cups spinach/greens blend
  • 1 1/2 cups basil
  • 2 Tbsp tahini
  • 3 Tbsp lemon juice about the juice of 1 lemon
  • 1/3 cup avocado oil
  • 1/3 cup grated Parm cheese
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions 

  1. Preheat your oven to 350.
  2. Dice your sweetpotatoes and add to a baking sheet. Combine olive oil and spices in a bowl and add to diced sweetpotato.
  3. Cook for 25-30 minutes, or until sweetpotatoes soften.
  4. While the sweetpotatoes are baking, add all ingredients to a blender or food processor and blend.
  5. Taste and adjust as necessary (more/less salt, more lemon, cheese, etc.)
  6. Pour pesto onto sweetpotatoes and enjoy.

Notes

*If you are just making the pesto by itself, you can skip the sweetpotatoes and baking and the pesto will be ready in minutes!
