Cheesy Carrot Bites

Cheesy carrot bites are similar to a cheesy meatball, and a great way to get extra veggies in to kids. They are wonderful for baby led weaning and feeding toddlers!

Ingredients  

  • ¾ cup shredded carrots
  • ½ cup grated cheese I used mozzarella
  • 1/3 cup panko breadcrumbs
  • 1 egg
  • ¼ cup pumpkin puree
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Dash of salt
  • 1/8 tsp pepper, optional

Instructions 

  1. Preheat the oven to 375 degrees F.
  2. Using the smallest hole size of a box grater, shred your carrots finely into a dish cloth or paper towel. Remove any excess moisture by squeezing and twisting the dish cloth or paper towel.
  3. Add shredded carrots to a large bowl. Add in the grated cheese, breadcrumbs, eggs, pumpkin, and spices and mix.
  4. Roll the mixture into small balls (meatball shapes - using a cookie scooper helps) and place on a greased baking sheet or Silpat.
  5. Bake for 15-18 minutes, or until edges start to brown.
  6. Pair with ranch/ketchup/hummus/favorite dipping sauce.

Notes

Makes about 10-15 carrot bites. 
Store in the fridge for up to 3-4 days, or freeze for up to 3 months.
