Sweet potato oatmeal cookies are an easy snack anytime of the day, and perfect for breakfast. Made with whole grain oats, flour, sweet potatoes, spices and maple syrup, my version of these cookies is vegan and easy for meal prep. It’s a simple recipe takes only about 30 minutes, and is made without bananas, peanut butter, or nuts.
In medium size mixing bowl, whisk together dry ingredients (flour, oats, baking soda, spices).
In a separate mixing bowl, whip coconut oil and sugars using an electric mixer or hand mixer. Add in maple syrup, egg, vanilla extract and mashed sweetpotato.
Add the dry ingredients to wet and mix until combined, adding in chocolate chips last. Batter will be wet. Let it sit for 5-10 minutes to firm up.
Scoop out dough in 1 ½-2 inch scoops and arrange on baking sheets.
Bake for 14-16 minutes. Allow sweetpotato oatmeal cookies to slightly cool before serving
Notes
*An easy way to quickly cook a sweetpotato is by microwaving it for 5-7 minutes, then letting it cool. You can also use leftover sweetpotatoes for this recipe.
