Corn and Bacon Fritters

These bacon and corn fritters are too good to put down. Crispy on the outside and cheesy and sweet on the inside, these corn fritters with bacon work great as an appetizer or easy meal.

Ingredients  

  • 5 pieces of bacon, chopped
  • 1 15 oz can corn, drained well
  • ¾ cup all purpose flour
  • ½ tsp baking powder
  • ¼ tsp pepper
  • ½ tsp salt
  • ¼ tsp paprika
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • 1/3 cup chopped red bell pepper
  • 1 white onion, diced
  • ½ cup milk
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1 Tbsp lemon juice
  • 1 Tbsp butter
  • Avocado, for topping
  • Green onions, optional for topping

Instructions 

  1. Start by adding your bacon to a medium size pan or non stick skillet and cooking, turning over as needed.
  2. While bacon is cooking, drain your corn. In large bowl, whisk together flour, baking powder, salt, pepper, paprika, Italian seasoning, garlic powder. Add in corn, bell pepper, onion, milk, eggs, cheese and lemon juice. Mix gently until combined.
  3. Once bacon is done cooking, cut into small bits and add to bowl.
  4. Add oil or butter to cooking pan or skillet, and form batter into small fritter shape (about the size of a cookie scoop or a little more). Cook for 2-4 minutes per side, until cooked through. Top with green onions and avocado slices.
  5. Enjoy! Serve with sour cream or Greek yogurt.

Notes

To save yourself time, you can opt for pre-diced onions and peppers.
If using frozen corn, make sure to soak up any excess liquid from the thawing process.
Store in a ziplock bag or freezer bag for up to 3 months. I like to store flat with 4 corn bacon fritters per bag.
