Easy Powdered Peanut Butter Cookies

These Pb2 oatmeal cookies are so easy to make and ready in under 15 minutes. Made with powdered peanut flour, oat flour, eggs, maple syrup and some spices, you can't beat the soft and delicate finish of these powdered peanut butter cookies.

Ingredients  

  • 1 cup oat flour
  • 1 cup powdered peanut butter
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla
  • ½ cup coconut oil, softened
  • 2 eggs
  • ¼ cup maple syrup you can use up to 1/3, 1/2 cup for a sweeter cookie

Instructions 

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients (oat flour through baking soda). Mix wet ingredients, and add to dry ingredients.
  3. Using a cookie scooper, form into small cookie shape and put on parchment paper or silpat mat.
  4. Flatten as needed.
  5. Bake for 8-10 minutes.

Notes

Optional add-in's: hemp seeds, chia seeds, flax seeds, coconut flakes, chocolate chips.
Store in a tupperware container or ziplock bag for 3-4 days, or freeze for up to 3 months in a stasher bag.
