Healthy and Soft Banana Bread Oatmeal Bars

These Banana Bread Oatmeal Bars taste like a nostalgic banana bread recipe, but in bar form. With bananas, rolled oats, soft oat flour and flax seeds, these banana chocolate chip oat bars are great for meal prep snacks, kids lunchboxes, on-the-go and more!
Dry Ingredients 1.5 cups rolled oats 1 cup oat flour or whole wheat flour 3/4 tsp baking powder 1 tsp cinnamon ¼ tsp salt 2 Tablespoons ground flaxseeds, optional Wet Ingredients 1 egg 2 mashed bananas* ¼ cup maple syrup ½ cup butter, melted or oil 1 tsp vanilla extract 1/2 cup mini chocolate chips
Preheat oven to 350 degrees F.
In a medium bowl, mix your dry ingredients.
Form a hole in the dry ingredients and add the wet ingredients to the same bowl. Stir well, adding chocolate chips in last.
Transfer banana oatmeal mixture to a greased 8×8 baking pan or use a piece of parchment paper. Top with extra chocolate chips if desired.
Bake for 30-35 minutes, or until fork comes out clean. Let cool for 10 minutes and top with sea salt before enjoying. Cut into 9-12 bars.
*Ripe bananas will work best when mashing. To mash, place bananas in a small bowl or on a flat surface, and push down with the back of a fork.
