Maple Blackberry Baked Oatmeal (Easy Meal Prep Breakfast)

Blackberry Baked Oatmeal is the perfect make ahead breakfast. Made with oats, yogurt, chia seeds, and blackberries, this easy baked oatmeal recipe is easy to freeze or enjoy for a busy week!

Ingredients  

  • 2 cups oats, rolled or old-fashioned
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 Tbsp flax seeds or chia seeds, optional
  • 1 cup milk of choice
  • 1/2 cup plain, low-fat greek yogurt
  • 2 large eggs
  • 1 ripe banana, mashed
  • 1/3 cup maple syrup, plus more for drizzling
  • 2 tsp vanilla extract
  • 1 1/2 cups blackberries, chopped

Instructions 

  1. Preheat your oven to 350 degrees.
  2. Coat the inside of an 8x8 baking pan with butter, oil or cooking spray.
  3. Mix your dry ingredients (oats, baking powder, salt, cinnamon, chia/flax seeds).
  4. In a separate bowl, mix your wet ingredients - milk, yogurt, eggs, mashed banana, maple syrup, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients, and gently fold in 1 cup of the chopped blackberries, reserving the remaining 1/2 cup for topping.
  6. Pour the batter into the dish, then add the ½ cup of sliced blackberries as a topping.
  7. Bake for 40-45 minutes, until the oatmeal bake is tender and moisture has been absorbed.
  8. Let cool and drizzle with maple syrup, cinnamon, brown sugar, and/or chocolate chips, if desired

Notes

Storage: Store in a covered tuppeware in the fridge for up to 4-5 days, or in the freezer for up to 3 months.
