Pomegranate Chocolate Bark

You need this pomegranate chocolate bark this holiday season. It's a fun, kid-friendly holiday snack. Pair with some other fun snacks to best enjoy these dark chocolate pomegranate bites!

Ingredients  

  • 8 oz dark chocolate, melted I used two dark chocolate bars
  • 2 tsp coconut oil or butter, for melting
  • 1 cup pomegranate arils
  • 1/2 cup chopped peanuts
  • 1 Tbsp honey
  • sea salt, to taste

Instructions 

  1. Break your chocolate bar(s) into pieces and add to microwavable safe bowl. Microwave in 30-40 second increments, until chocolate is melted. Sometimes, adding it a bit of coconut oil can help the chocolate mix more easily.
  2. To the bowl of melted chocolate, add pomegranate arils.
  3. Spread the chocolate pomegranate mixture out on a parchment-lined baking sheet. Scatter peanuts around on the mixture.
  4. If desired, sprinkle a tablespoon of honey on top of the bark mixture. Sprinkle sea salt as well
  5. Place in the freezer for 2 hours, or overnight.
  6. Upon removing, break bark with a pizza cutter or sharp knife and enjoy.

Notes

* Chocolate chips can be substituted for dark chocolate bars.
* I find that using a pizza cutter to break the chocolate after freezing helps!
