Pumpkin Protein Overnight Oats

Pumpkin Protein Overnight Oats are a great way to start your morning with protein and fiber. Packed with hearty oats, protein-packed cottage cheese, honey and pumpkin flavors, these pumpkin cheesecake overnight oats will become your new favorite on-the-go breakfast.

Ingredients  

  • 1 cup oats
  • 1 T chia seeds
  • 2 T hemp seeds
  • ¼ tsp cinnamon
  • ¾ tsp pumpkin pie spice
  • ½ cup pumpkin puree
  • 2/3 cup cottage cheese
  • ½ cup milk or more/less as needed
  • 1-2 tsp honey, as desired for sweetness

Instructions 

  1. Mix all ingredients in a mason jar or Tupperware and give it a stir. Transfer to two smaller mason jars if desired.
  2. Let it sit overnight or at least 3-4 hours in the fridge.
  3. Enjoy (any time of year)!
