Quick Mango Quinoa Salad with Avocado

This quinoa salad with mango is a fun and fresh spin on pasta salad. Naturallygluten-free and full of nourishing ingredients like tomatoes, cucumber, avocado,and more, this healthy quinoa salad is perfect for the summer, or anytime youfeel like a refreshing, flavorful dish.

Ingredients  

  • 2 cups quinoa
  • 1 cucumber, peeled and diced
  • 3/4 cup grape tomatoes, halved
  • 1 avocado, sliced
  • 1 mango, peeled and diced
  • 2 tbsp chopped cilantro
  • 1 tbsp olive oil
  • 1/3 cup feta cheese, substitute with nutritional yeast if vegan
  • 1/8 tsp garlic salt, optional
  • Juice of 2 limes
  • Salt and pepper, to taste

Instructions 

  1. Cook quinoa according to package directions and let cool.
  2. Cut your grape tomatoes, cucumber, avocado, mango and cilantro.
  3. Once the quinoa is cooled, mix in olive oil and juice from the lime and mix around.
  4. Top with feta cheese and/or nutritional yeast, and salt and pepper to taste

Notes

Remember to add time to let the quinoa cool.
