Sheet Pan Pork Chops and Sweet Potatoes

Sheet Pan Pork Chops and Sweet Potatoes is an easy sheet pan fall dinner made with delicious pork tenderloin with apples and sweet potatoes.

Ingredients  

  • 4 boneless pork loin chops about 1 inch thick
  • 3 Tbsp maple syrup, divided
  • 2 medium sweet potatoes, diced
  • 1 yellow onion, sliced
  • 1 large apple, diced I used Honeycrisp
  • 2 tbsp olive oil
  • ¼ tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp garlic powder
  • 1 Tbsp thyme

Instructions 

  1. Put pork chops in ziplock bag and add maple syrup for marinade. Leave it in the fridge for 1-2 hours beforehand (if you don’t have time to do this, just pour the maple syrup over the pork on the sheet pan).
  2. Preheat oven to 425. Season pork chops with salt, pepper and place on sheet pan.
  3. Mix sweet potatoes, onion and diced apple in mixing bowl. Add olive oil, salt, pepper, garlic salt, thyme and remainder of maple syrup. Mix, and then transfer mixture to sheet pan.
  4. Bake for 20-25 minutes, tossing halfway through.

Notes

It is optional to marinate the pork chops beforehand. You can skip this step and instead, just brush the maple syrup over the pork chops before cooking.
Depending on the thickness of your pork chops, you may need to cook a little longer. Yours will be done when they reach an internal temperature of 145 degrees.
