Sweetpotato Energy Balls

These no bake 5 ingredient peanut butter energy bites are a great on-the-go snack. Made with oats, sweetpotatoes, peanut butter, coconut and some spices, these sweetpotato bites are everything you'd want in a healthy portable snack.

Ingredients  

  • 1 cup cooked sweetpotato
  • 3/4 cup rolled oats
  • 1/2 cup peanut butter
  • 3 tbsp honey
  • 1/2 cup unsweetened shredded coconut
  • 1/2 tsp ground ginger can use up to 3/4 tsp
  • 1/2 tsp cinnamon

Instructions 

  1. Combine all ingredients in a large bowl and stir until well combined. Place bowl in fridge to firm up (about 20 minutes).
  2. Line baking sheet with parchment paper. Remove dough and portion into snack-sized bites. Gently roll bites into shredded coconut and place back in fridge for 15-20 more minutes (or the freezer for 10 minutes)
  3. Remove from fridge and enjoy!

Notes

These will last up to a week in the fridge.
