Sweetpotato Mac and Cheese

This Healthy Sweetpotato Mac and Cheese is the answer to your cheesy pasta dreams. A mixture of whole wheat pasta, mashed sweetpotato, cheese and kale make this sweetpotato pasta bake a winner!

Ingredients  

  • 2 Tbsp olive oil, divided
  • 2 medium sweetpotatoes about 2 cups, cooked and mashed
  • 6 cups whole wheat pasta I used rotini
  • 2 Cups chopped kale, stems removed
  • 1 tsp paprika
  • 3/4 tsp salt
  • 3 Tbsp parsley, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1 Tbsp Italian seasoning
  • 3 eggs
  • 1/4 cup low fat milk
  • 1 ¼ cups shredded mozzarella cheese or cheese of choice + more for sprinkling

Instructions 

  1. Preheat oven to 375 degrees F.
  2. Rub or spray the inside of a large casserole dish with olive oil or butter.  
  3. To cook sweetpotato, boil a pot of water and add sweetpotato. Cook until tender, 10-15 minutes. Alternatively, you can microwave for 5-7 minutes, or until soft.
  4. Prepare pasta according to package directions (but keep al dente). While pasta is cooking, saute kale in olive oil with spices for 2-3 minutes, or until slightly wilted.
  5. Drain cooked pasta and let cool for 5 minutes.
  6. Once cooled, add pasta, mashed sweetpotatoes, spices, and kale to medium bowl and stir to combine.
  7. In a small bowl, whisk together eggs, milk and cheese, and add to pasta and sweet potato mixture.
  8. Mix well and add to large casserole dish, reserving extra cheese to sprinkle on top.
  9. Bake for 30-35 minutes, or until cheese has melted and top begins to brown. 

Notes

Don’t overcook the pasta since it will get further cooked when baking
