This Turkey Sausage Breakfast Casserole is an easy make ahead breakfast that you just pop in the oven in the morning! Enjoy this turkey sausage sweet potato egg casserole after a morning workout, for meal prep or with your favorite people!
4cupssweetpotatoes, dicedabout 2 medium sweet potatoes
½cupmushrooms
1small yellow onion, diced
½red bell pepper, diced
2Tbspolive oil or butter
16ozturkey sausageprecooked or uncooked both work
6eggs
1 ½cupsshredded cheese of choice
12ozcan evaporated milk
1tspitalian seasoning
1tspgarlic powder
1/2tspsalt
¼tsppepper
Instructions
Chop your vegetables (sweetpotatoes, mushroms, onion and red pepper).
Preheat large skillet over medium high heat and start cooking sweetpotatoes with olive oil, butter or coconut oil.
If your turkey sausage is not precooked, cook it. Preheat a large skillet over a medium flame. Heat cooking oil and add turkey sausage (remove caseings if necessary).
In large mixing bowl, whisk together eggs, condensed milk, cheese and spices. In a separate mixing bowl, mix cooked vegetables and turkey sausage.
Once turkey sausage and and vegetables have cooled, combine with eggs, milk and cheese mixture.
Grease 9x13 casserole pan and pour combined mixture into pan, making sure to spread all ingredients out evenly.
Bake at 350 for 45-55 minutes or until cooked through. Let cool and enjoy with your favorite toppings.
Notes
If planning to freeze turkey sausage breakfast casserole, continue to step 6 and then cover with foil and plastic wrap and place in freezer for up to 2-3 months.
