The Best Gluten Free  Pasta Salad



INGREDIENTS: Pasta Salad - 12 oz gluten free penne, - 2 cups broccoli florets - 1 medium pepper, chopped - 1 onion, chopped - ½ cup kalamata olives - 1/4 cup nutritional yeast or parmesan cheese (optional) - Salt and pepper, to taste Hummus Dressing - 2/3 cup plain hummus - 1 Tbsp olive oil - 1 Tbsp water - 1/2 tsp lemon juice - salt and pepper, to taste

RECIPE STEPS: 1. Cook your gluten free pasta according to directions and desired consistency. Let it cool.

RECIPE STEPS: 2. In a large bowl, combine broccoli, pepper, onion, olives, cheese and salt and pepper. Pour in the chilled pasta, dressing and mix.
