5 Minute Avocado Chia Pudding

Need to switch up your breakfast routine? This avocado chia pudding is ready in minutes, and doesn't even need to sit overnight! It's easy for meal prep, great for babies and kids, and chock full of protein, fiber and nutrition!

Ingredients  

  • 1 ripe avocado, mashed
  • 1 ripe kiwi
  • ¼ cup chia seeds
  • ¼ cup full-fat greek yogurt
  • ½ cup milk can also use breastmilk/formula
  • 1 Tbsp hemp seeds
  • 1 tsp vanilla extract, optional
  • 1-2 Tbsp maple syrup optional, adjust to taste
  • pinch of sea salt

Instructions 

  1. Remove skin and seed from avocado and mash in a bowl.
  2. Remove skin from kiwi and cut into small chunks and add to bowl. Add the rest of the ingredients to the bowl.
  3. Use an immersion blender (or transfer to a blender) and blend until avocado chia pudding reaches a smooth consistency.
  4. Serve immediately, or freeze into ice cubes for later!

Notes

Can top with granola/fruit, nuts/nut butter, etc.
Store in the fridge for up to 3 days. You can also freeze leftovers in an ice cube tray for smoothie ice cubes.
