1lbground chicken or boneless chicken breasts/thighs
3medium sweetpotatoes, diced
2tsppaprika
2tspcumin
2tsporegano
1tspchili powder
¼tspthyme
½tspsalt
¼tsppepper
15-ozcan of black beans, rinsed and drained
15-ozcan of kidney beans, rinsed and drained
2Tbspcilantro, chopped, for topping
Instructions
Drizzle 2 tablespoons of butter in pot over medium-high heat. Add in diced onions and sautee for about 5 minutes.
Add in garlic cloves and continue to mix with diced onions for 2-3 minutes, until onions are translucent.
Next, add in broth, diced tomatoes, chicken, sweetpotatoes and spices and give it a good stir, bringing the pot to a boil. Cover and cook for 10-15 minutes, or until sweetpotatoes start to soften.
After about 10-15 minutes, bring pot down to medium-high heat and cook for 5-10 minutes longer (if needed), continuing to check on the chicken. Add in black beans and kidney beans.
Remove pot from heat, stir the chili and cover until ready to serve.
Serve or top with chips, cheese, sour cream/yogurt etc.
