Chocolate Covered Dates with Pistachios

These dates covered in chocolate are a healthy, nutrient-rich snack for the family! Enjoy them right out of the freezer, or serve them in a lunchbox or as an after-school snack!

Ingredients  

  • 20 medjool dates
  • 1 cup chocolate chips, melted
  • 1 tsp coconut oil
  • 1/2 cup peanut butter
  • 1/4 cup pistachios, crushed
  • 2 tsp chia seeds
  • 1 Tbsp flaky sea salt

Instructions 

  1. Slice your dates lengthwise and remove the pits from the dates (if they are not already de-pitted).
  2. Add your chocolate chips with a tsp of coconut oil to a microwave-safe bowl, and heat in 30-second increments, stirring after each time. It took me about three 30-second increments. Heat mix until melted.
  3. Spread your dates out on a parchment-lined baking sheet or silicone sheet. Using a spoon, add a dollop of peanut butter to each date, followed by chopped pistachios and chia seeds.
  4. Close dates up and put them on a long wooden stick or toothpick. Dip each date in the melted chocolate and put it back on the baking sheet/parchment paper.
  5. Sprinkle with sea salt and transfer to the freezer for at least 2 hours.
