Chocolate Covered Dates with Pistachios

I always try to keep some of these and our favorite frozen greek yogurt bites on hand, especially in the summer when portable, healthy no bake snacks are key.

I initially made these because I had to figure out how to eat more dates towards the end of pregnancy. One or two dates are fine – but 6 dates a day?! I couldn’t do it.

Until I tested this chocolate covered dates recipe – and then I could. Dates are supposed to help “ripen your cervix.” And since baby #4 actually came three days after her due date, I was up for trying anything! More details on my fourth pregnancy here.

Gather Your Ingredients

Here’s what you’ll need to make this recipe.

  • medjool dates – I like to buy the pitted ones. Otherwise, you’ll need to remove the pits. Medjool dates are ideal because they’re naturally soft and chewy.
  • chocolate chips
  • coconut oil
  • crushed pistachios – You can also use another nut or seed if you’d like! Just make sure to crush them into smaller pieces.
  • peanut or almond butter – I prefer a drippy, liquid kind.
  • chia seeds – You can also use hemp seeds
  • sea salt

Easy Dates Covered in Chocolate – The Perfect Snack!

Here’s how to make them – quick and easy.

Slice your dates lengthwise and remove the pits from the dates (if they are not already de-pitted).

Next, we’ll melt our chocolate to cover the dates.

Add your chocolate chips with a tsp of coconut oil to a microwave-safe bowl.

Heat in 30-second increments, stirring after each time. It took me about three 30-second increments, then mix until melted.

Spread your dates out on a parchment-lined baking sheet or silicone sheet. Then, add a dollop of peanut butter to each date, followed by chopped pistachios and chia seeds.

Dates Too Hard?

If the dates are a little dry or firm, microwave them for 5–10 seconds to soften them before stuffing!

Close dates up and put them on a long wooden stick or toothpick. Dip each date in the melted chocolate and put it back on the baking sheet/parchment paper.

Then, place in the freezer for 1-2 hours to freeze!

Storage and Tips for Success

Here are some tips that I recommend for the best outcome:

  • Adding sea salt before freezing is a must! It brings out so much more flavor.
  • I love to store in Stasher bags in the freezer and enjoy as a healthy dessert!
  • Don’t overheat the chocolate: Melt in short intervals, stirring between each, to prevent scorching. If the chocolate overheats, it gets too hard to stir.

  • 20 medjool dates
  • 1 cup chocolate chips, melted
  • 1 tsp coconut oil
  • 1/2 cup peanut butter
  • 1/4 cup pistachios, crushed
  • 2 tsp chia seeds
  • 1 Tbsp flaky sea salt

Instructions 

  1. Slice your dates lengthwise and remove the pits from the dates (if they are not already de-pitted).
  2. Add your chocolate chips with a tsp of coconut oil to a microwave-safe bowl, and heat in 30-second increments, stirring after each time. It took me about three 30-second increments. Heat mix until melted.
  3. Spread your dates out on a parchment-lined baking sheet or silicone sheet. Using a spoon, add a dollop of peanut butter to each date, followed by chopped pistachios and chia seeds.

  5. Sprinkle with sea salt and transfer to the freezer for at least 2 hours.
