Frozen Trail Mix Bites

These easy trail mix bites are a perfect snack for an active lifestyle! Filled with protein, fiber and micronutrients, they’re an easy on-the-go snack, lunchbox snack or fill-you-up snack!

Ingredients  

Instructions 

  1. In a medium bowl, combine peanut butter, coconut oil, honey, and chia/flax seeds.
  2. In a separate bowl, combine soy nuts, pepitas, and chocolate chips
  3. Spray a muffin tin with cooking oil and divide the nut/seed mixture into the muffin cups (about a tablespoon of each).
  4. Pour the liquid peanut butter mixture over the nuts mixture until the cups are 2/3 full.
  5. Lay the muffin tin flat in the freezer for about 35-40 minutes, or until the cups are frozen solid.  
  6. Once frozen, carefully remove trail mix bites from muffin tin by sliding a spoon under the bottom of the trail mix bite. Place in freezer-friendly bag and keep stored in the freezer.
