Gluten Free Almond Flour Apple Crumble

This apple crumble with almond flour is a cozy, gluten free apple crisp made with warm cinnamon apples and a golden, nutty almond flour topping.

Ingredients  

  • 2 honeycrisp apples, diced Save one for the apple crumble topping
  • 1 cup quinoa, cooked
  • 1/4 cup oats, plus 1 tbsp for topping
  • 1/4 cup almond flour
  • 1 egg
  • 1/4 cup almond or coconut milk
  • 2 tbsp coconut oil, slightly melted but somewhat solid
  • ΒΌ cup maple syrup
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1/2 tsp cinnamon
  • 2-3 tbsp mini chocolate chips

Instructions 

  1. Pre heat oven to 350.
  2. Mix all ingredients in a large bowl, leaving one apple and 1 tbsp oats out for topping. Fold in chocolate chips last.
  3. Pour batter into small cast iron skillet or 9 inch pie bowl
  4. Top with remaining oats, apple, and additional cinnamon and bake for 45-50 minutes, or until toothpick comes out clean.
  5. Let cool for 10-15 minutes before serving.
