Heat olive oil in large skillet over medium-high heat.
Wash veggies and dice them while the pan heats up (or use this vegetable chopper).
Once pan is warm, add in minced garlic, onion, pepper and ground turkey. Cook for 5-7 minutes, until ground turkey is no longer pink and onions are fragrant (use a meat thermometer).
Remove turkey, diced onions and peppers from skillet and set aside on a plate.
To the same skillet, add the remaining Tbsp of olive oil, diced sweetpotatoes and bone broth. Cover and cook over low-medium heat for 12-15 minutes, or until sweetpotatoes are cooked through.
Remove cover and “scramble” diced sweetpotatoes every few minutes so they don’t stick to the pan. Add more broth/oil as needed
Once sweetpotatoes are softened, add ground turkey, onions and pepper mixture back to pan over low heat. Taste and add salt and pepper as desired.
Serve with avocado, salsa, guacamole, hummus, etc.
