One Pan Ground Turkey Sweetpotato Skillet

Sweetpotatoes are one of our favorite foods, but they take a while to cook in the oven.

If you have a good air fryer, you can air fry sweetpotatoes in under 15 minutes, or you can make this turkey and sweetpotato skillet, where we’re cooking sweetpotatoes on the stove!

Ground turkey is a versatile protein and can take on many flavors – we love to use it in our turkey taco quinoa skillet or a cheesy turkey veggie frittata for breakfast.

This skillet meal with turkey and sweetpotatoes is great anytime of year, and has it all – high in protein, high in fiber, and complex carbohydrates. It’s a total keeper and favorite in our house!

Notes About the Key Ingredients

  • Turkey – Ground turkey is the easiest and quickest method. If you have leftover turkey breast or thanksgiving turkey, that’s an even better shortcut.
  • Sweetpotatoes – If you have leftover baked sweetpotatoes, you can use them and save yourself some more time.
  • Broth – I prefer to use bone broth for the extra protein and micronutrients. But chicken broth or veggie broth will also work.

How to Make a Turkey and Sweetpotato Skillet

First, heat your avocado oil over medium-high heat in a skillet, and chop your vegetables.

For a shortcut, get yourself a vegetable chopper!

Then, add your garlic, diced onions and ground turkey to the skillet, and cook for 5-7 minutes, until the ground turkey is no longer pink and the onions are fragrant.

Hot Recipe Tip

Using a meat thermometer, ground turkey should be cooked to 165 degrees F.

Remove the turkey and onions from the skillet and set aside on a plate.

Then, add the diced sweetpotatoes and some more oil to the same skillet over medium-high heat.

Cover and cook for 12-15 minutes, or until sweetpotatoes are cooked through.

Remove the cover and “scramble” the diced sweetpotatoes every few minutes so they don’t stick to the pan. You can add more oil or broth as needed.

Once the sweetpotatoes soften, you can add the ground turkey, onions, and pepper back in.

Voila – your dinner is done! Add salt and pepper as needed and serve with avocado, salsa, guacamole, hummus, etc. Add cheese if you’d like!

Make it a Leftover Thanksgiving Recipe

I love making a turkey sweetpotato skillet as a leftover Thanksgiving recipe using leftover turkey. I’ll also add leftover stuffing, cranberry sauce or cranberries, greean beans, etc. It’s so good and flavorful in a bowl.

Proper Storage

Let your turkey skillet with sweetpotato cool completely and then store in an airtight tupperware in the fridge for up to 3-4 days.

Reheat in the microwave or on the stove.

One Pan Ground Turkey Sweetpotato Skillet

Ingredients  

  • 1-2 Tbsp avocado oil
  • 1 tsp minced garlic
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 1 lb lean ground turkey
  • 2 medium sweetpotatoes, diced
  • cup broth (I like bone broth)
  • Salt and pepper

Instructions 

  1. Heat olive oil in large skillet over medium-high heat.
  2. Wash veggies and dice them while the pan heats up (or use this vegetable chopper).
  3. Once pan is warm, add in minced garlic, onion, pepper and ground turkey. Cook for 5-7 minutes, until ground turkey is no longer pink and onions are fragrant (use a meat thermometer).
  4. Remove turkey, diced onions and peppers from skillet and set aside on a plate.
  5. To the same skillet, add the remaining Tbsp of olive oil, diced sweetpotatoes and bone broth. Cover and cook over low-medium heat for 12-15 minutes, or until sweetpotatoes are cooked through.
  6. Remove cover and “scramble” diced sweetpotatoes every few minutes so they don’t stick to the pan. Add more broth/oil as needed
  7. Once sweetpotatoes are softened, add ground turkey, onions and pepper mixture back to pan over low heat. Taste and add salt and pepper as desired.
  8. Serve with avocado, salsa, guacamole, hummus, etc.

Notes

To use up Thanksgiving leftovers, you can use Thanksgiving turkey leftovers, and add in green beans, stuffing, cranberries and/or cranberry sauce! The flavors mesh really well together. 
Store in an airtight container in the fridge for up to 3-4 days.
