Pumpkin Seed Granola with Peanut Butter

This Pumpkin Seed Granola with Peanut Butter boasts 3 forms of pumpkin and is the perfect crunchy pumpkin granola recipe. It makes a great on-the-go snack or topping.

Total Time 30 minutes

Ingredients  

  • 3.5 cups old fashioned oats
  • 1/3 cup butter, melted
  • 1 cup peanut butter or almond butter
  • ½ cup honey
  • 1 tsp sea salt
  • ½ tsp cinnamon
  • 1 ½ tsp pumpkin pie spice
  • ½ cup canned pumpkin puree
  • 1/3 cup pumpkin seeds

Instructions 

  1. Preheat oven to 325.
  2. Mix ingredients in large bowl and stir carefully to combine and make sure oats are coated. 
  3. Spread mixture THIN on baking sheet. The mixture should be thick and wet. 
  4. Bake for 15 minutes on middle rack. Shake and spread out and bake for 5-10 more minutes or until edges are starting to turn brown. 
  5. Let cool for 15 minutes and break into clusters. 

Notes

The granola will firm up a little as you let it cool.
