Ingredients

  • cup mashed, cooked sweetpotato*
  • 1 ¼ cups cooked rice any type of rice
  • 1/2 cup canned salmon
  • 1/4 tsp garlic powder
  • 1/2 avocado, sliced, for topping or serving

Instructions

  1. Microwave your sweetpotato for 5-6 minutes, until soft. Scoop out flesh and set skin aside.
  2. In a medium bowl, mix mashed sweetpotato, cooked rice, canned salmon, and garlic powder together. I like using my hands to do so, or using gloves.
  3. Using a cookie scooper, scoop out “meatball size” from mixture and place on a flat service or clean piece of parchment paper (I got about 12 meatballs).
  4. Enjoy! Serve with soy sauce, avocado, etc.

Notes

If you want your salmon meatballs crispier or browned, you can broil for a few minutes before enjoying.
