Strawberry Baked Oatmeal

This Strawberry Baked Oatmeal is a healthy summer oatmeal staple. Strawberry and banana oatmeal is sweet enough and can be made in advance for those busy weeks!

Ingredients  

  • 1 1/2 Tbsp butter, melted
  • 2 cups oats rolled or old-fashioned
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 1/2 cups milk of choice I used 1%
  • 2 large eggs
  • 2 bananas
  • 1/3 cup maple syrup, plus more for drizzling
  • 1 tsp vanilla extract
  • 1 1/2 cups strawberries, chopped
  • 1/2 cup chocolate chips, optional
  • 1 Tbsp brown sugar

Instructions 

  1. Preheat oven to 350 degrees.
  2. Coat the inside of a 2 quart baking dish with butter, oil or non-stick spray.
  3. Mix dry ingredients (oats, baking powder, salt, cinnamon).
  4. Beat in milk, eggs, 1 banana, maple syrup, and vanilla extract. Add in strawberries and chocolate chips, reserving some for topping.
  5. Pour batter inside the dish, adding a final layer of strawberries and sliced bananas on top. Sprinkle with brown sugar
  6. Bake for 30-35 minutes, until the oatmeal is tender and moisture has been absorbed.

Notes

Optional toppings: hemp seeds, chia seeds, flax seeds, fruit, cocoa nibs
