Strawberry Baked Oatmeal

This Strawberry Baked Oatmeal is a healthy summer oatmeal staple. Strawberry and banana oatmeal is sweet enough and can be made in advance for those busy weeks!

rolled or old-fashioned

baking powder

milk of choice

bananas

maple syrup, plus more for drizzling

vanilla extract

strawberries, chopped

chocolate chips, optional

brown sugar
Instructions
Preheat oven to 350 degrees.
Coat the inside of a 2 quart baking dish with butter, oil or non-stick spray.
Mix dry ingredients (oats, baking powder, salt, cinnamon).
Beat in milk, eggs, 1 banana, maple syrup, and vanilla extract. Add in strawberries and chocolate chips, reserving some for topping.
Pour batter inside the dish, adding a final layer of strawberries and sliced bananas on top. Sprinkle with brown sugar
Bake for 30-35 minutes, until the oatmeal is tender and moisture has been absorbed.
