Sweetpotato Cottage Cheese Bowl (Taco Bowl)

This Sweetpotato Cottage Cheese Bowl is such an easy family recipe that's full of flavor and nutrition! This sweetpotato taco bowl uses chicken, sweetpotatoes, taco seasonings, with your choice of veggies and cottage cheese for a taco-inspired meal!

Ingredients  

  • 2 medium cooked sweetpotatoes, diced*
  • 1 lb chicken^ I used chicken tenders
  • 1-2 Tbsp taco seasoning
  • ½ cup diced cherry tomatoes
  • 2 heads romaine lettuce chopped
  • 1 avocado diced
  • cup shredded cheese
  • 3/4 cup cottage cheese
  • Tortilla chips, for topping optional

Instructions 

  1. Gather your ingredients*
  2. Season chicken or meat with taco seasoning (or make your own spice blend), and cook over medium-high heat for 10 minutes, flipping once, or until internal temperature reaches 165 degree F (use a meat thermometer)
  3. Arrange sweetpotatoes, cherry tomatoes and avocado in a serving bowl. Add in cooked chicken, shredded cheese and cottage cheese.
  4. Sprinkle tortilla chips on top and mix everything together. Enjoy!

Notes

*The cook time in this recipe accounts for the sweetpotatoes already being cooked. If you aren’t using leftover sweetpotatoes, you’ll want to allow some time to cook your sweet potatoes. If you want to cook sweetpotatoes quickly, air fry them for 10 minutes. 
^ Rotisserie chicken or ground beef also work well!
Optional additions - rice, onion, green onion, peppers, lettuce, spinach
I like to mix some of the taco seasoning in with the cottage cheese to give it more flavor
To make your own taco seasoning: 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp cumin, 1/4 tsp paprika, ¼ tsp salt, ⅛ tsp pepper
