A few notes on the key ingredients:
- Veggies – You can use whatever you typically like in a taco bowl! For our cottage cheese taco bowl, we used sweetpotatoes, tomatoes, romaine lettuce, and avocado.
- Chicken – Rotisserie chicken works great in this taco bowl recipe because there’s no extra cooking. But, if you like to season and cook your own, or substitute it with beef or pork, go for it! This cottage cheese taco bowl works with all different proteins.
- Sweetpotatoes – You can cook your sweetpotatoes in the oven or air fryer! I like to meal prep them ahead of time to decrease the time.
- Taco seasoning – I honestly find it easier just to keep taco seasoning packets on hand and use them for this taco bowl. But if you want to make your own, a good base is or 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp cumin, 1/4 tsp paprika, ¼ tsp salt, ⅛ tsp pepper
- Cottage cheese – I like full-fat, but low-fat works just as well.

How to Make Sweetpotato Taco Bowls with Cottage Cheese
Gather your ingredients. If you aren’t using leftover sweetpotatoes, you’ll want to allow some time to preheat the oven and then bake the sweetpotatoes, which will add time.
For a quicker way to cook your sweetpotatoes, air fry them for 10 minutes (similar to air fryer sweetpotato wedges but cut into cubes) or cook them on the stove in a covered pot for 10-15 minutes (note: they may not be as crispy).
Or, just cooking parts of meals earlier in the day is something I always recommend in my meal prep ebook.

While sweetpotatoes are cooking, season your chicken or meat with taco seasoning and cook over medium-high heat for 10 minutes, flipping once.
The internal temperature should reach 165 degrees F, using a meat thermometer.

In a serving bowl, arrange the cooked sweetpotatoes, cherry tomatoes, romaine and avocado, and add cooked chicken, shredded cheese and cottage cheese on top.
Great Tip
I like to mix some of the taco seasonings in with the cottage cheese to infuse the flavor. Cottage cheese + salsa is also a great combination!
Sprinkle tortilla chips on top if you like a crunch! I definitely prefer it.

Ingredients
- 2 medium cooked sweetpotatoes, diced*
- 1 lb chicken^ I used chicken tenders
- 1-2 Tbsp taco seasoning
- ½ cup diced cherry tomatoes
- 2 heads romaine lettuce chopped
- 1 avocado diced
- ⅓ cup shredded cheese
- 3/4 cup cottage cheese
- Tortilla chips, for topping optional
Instructions
- Gather your ingredients*
- Season chicken or meat with taco seasoning (or make your own spice blend), and cook over medium-high heat for 10 minutes, flipping once, or until internal temperature reaches 165 degree F (use a meat thermometer)
- Arrange sweetpotatoes, cherry tomatoes and avocado in a serving bowl. Add in cooked chicken, shredded cheese and cottage cheese.
- Sprinkle tortilla chips on top and mix everything together. Enjoy!
